medium tomatoes, cut into 1/4-inch slices

cup tarragon wine vinegar or cider vinegar

tablespoon olive or vegetable oil

tablespoon chopped fresh or1 teaspoon dried tarragon leaves

Freshly ground pepper

Lettuce leaves

Preparation

Place tomatoes in nonmetal dish. Shake vinegar, oil and tarragon in tightly covered container; pour over tomatoes. Sprinkle with pepper. Cover and refrigerate at least 2 hours to blend flavors. Serve on lettuce.
