Ingredients

medium papaya, peeled, seeded and chopped (1 1/2 cups)

small cucumber, peeled and chopped (1 cup)

small carrot, shredded (1/3 cup)

small jalapeño chili, seeded and finely chopped

tablespoon lime juice

tablespoon white vinegar

teaspoon sugar

teaspoon salt

Preparation

Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors but no longer than 2 days. Stir salsa before serving.
