cups coarsely chopped tomatoes

cups cubed fresh watermelon

fresh red Thai chile peppers, seeded

cup chopped red onion

tablespoon lime juice

teaspoon salt

1/2

teaspoon freshly ground black pepper

1/4

cup extra-virgin olive oil

1/4

cup shredded fresh basil leaves

Preparation

In blender, place first 4 ingredients. Cover; blend until thoroughly pureed.

Add remaining ingredients except basil. Cover; blend to combine. Refrigerate until chilled, about 2 hours or until serving time.

Divide evenly among 4 bowls. Top with basil leaves.
