Ingredients

cup uncooked regular long-grain rice

cup water

1

medium onion, chopped (1/2 cup)

small green bell pepper, chopped (1/2 cup)

clove garlic, finely chopped

teaspoon chili powder

1

teaspoon ground cumin

1/2

teaspoon salt

1

can (14 1/2 ounces) diced tomatoes, undrained

Preparation

Spray 3 1/2- to 4-quart slow cooker with cooking spray. Mix all ingredients except tomatoes in cooker. Top with tomatoes.

Cover and cook on low heat setting 2 to 3 hours or until rice and vegetables are tender and most of the liquid has been absorbed.
