Ingredients

tablespoons reduced-fat mayonnaise or salad dressing

teaspoon soy sauce

1/2

teaspoon sugar

1/4

teaspoon ground ginger

can (4 to 4 1/2 oz) tiny shrimp, drained, rinsed

medium green onion, sliced (1 tablespoon)

teaspoons butter, softened (do not use margarine)

4

slices whole wheat bread

1/2

medium cucumber, thinly sliced (3/4 cup)

Preparation

In small bowl, mix mayonnaise, soy sauce, sugar and ginger. Stir in shrimp and onion.

Spread butter on 1 side of 4 bread slices. Top 2 bread slices with cucumber slices. Spread about 1/3 cup shrimp mixture on cucumber slices; top with remaining bread.
