Preparation
Heat the oven to 350°. Grease pan, 15x10-inch pan with sides, with shortening.
Mix the egg yolk, 1 cup granulated sugar and butter in large bowl with wooden spoon.
Stir in the flour and cinnamon to sugar mixture until well mixed. Press dough in the greased pan, with fingers.
Make Glitter Sugar by placing the 1/2 cup granulated sugar in the plastic bag. Add a few drops of food color to the sugar (see tip below for colors/amounts). Seal bag closed. Squeeze the sugar in the bag until it becomes evenly colored. (Or, if desired, divide sugar among several bags. Tint each with a drop or two of different colors of food color.)
Mix the water and egg white in small bowl with whisk until foamy. Brush egg white mixture over dough, using the pastry brush. Sprinkle Glitter Sugar lightly over dough. (For a rainbow design, make semicircles of several colors.)
Bake 20 to 25 minutes or until bars are very light brown. Immediately cut pan of bars into 8 rows by 6 rows, using the sharp knife. Cut squares in half. Place pan on the wire cooling rack. Cool bars completely.
