Ingredients

cup mayonnaise

cups plain yogurt

1/2

cup fresh basil leaves

tablespoons lemon juice

cups cubed deli rotisserie chicken (from 2- to 3-lb chicken)

cup cubed cooked peeled potatoes

red bell pepper, chopped

green bell pepper, chopped

yellow bell pepper, chopped

cup Greek olives, pitted

1/4

cup capers, rinsed

1/4

cup chopped red onion

Salt and pepper to taste

Mixed salad greens, if desired

Preparation

In food processor, place mayonnaise, 1/2 cup of the yogurt and the basil. Cover; process until pureed. Add lemon juice. Cover; process just until blended. Transfer mixture to large bowl.

Add remaining 1 cup yogurt; mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper.

Cover; refrigerate 3 hours. Serve salad on mixed greens.
