bone-in pork loin chops, 1/2 inch thick (about 1 1/4 lb), trimmed of fat

teaspoon salt

1/2

cup apple juice or dry red wine

1/4

cup real maple syrup

1/3

cup coarsely chopped dried figs

1

teaspoon cornstarch

1/4

cup water

Preparation

Spray 12-inch skillet with cooking spray; heat skillet over medium-high heat. Sprinkle pork with salt; place in skillet. Cook about 5 minutes, turning once, until browned. Remove from skillet; keep warm.

To same skillet, cook apple juice, maple syrup and figs over medium-high heat 5 minutes, stirring frequently.

In small bowl, mix cornstarch and water; stir into juice mixture. Cook over medium-high heat about 2 minutes, stirring constantly, until thickened and clear.

Reduce heat to medium. Return pork to skillet; spoon sauce over pork. Simmer about 2 minutes or until pork is no longer pink in center.
