cup sliced fresh mushrooms (2 ounces)

large red onion, cut into 1/8-inch slices

small green bell pepper, chopped (1/2 cup)

Preparation

Cook sausage in 10-inch skillet over medium-high heat about 10 minutes, stirring occasionally, until no longer pink in center; drain.

Stir in mushrooms and onion; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until vegetables are tender. Stir in bell pepper. Cover and simmer about 5 minutes or until bell pepper is crisp-tender.
