Ingredients
1
cup Fiber One™ original bran cereal
3/4
cup Yoplait® Fat Free plain yogurt
1 1/2
teaspoons Greek seasoning
1
cup tightly packed fresh baby spinach leaves, finely chopped
1
lb extra lean (at least 93%) ground beef
10
whole wheat mini burger buns or dinner rolls, split
1/4
cup reduced-fat crumbled feta cheese (1 oz)
20
fresh baby spinach leaves
20
thin slices plum (Roma) tomato (from 3 medium)
Preparation
Heat oven to 350°F. Spray broiler pan rack with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
In large bowl, mix cereal, yogurt and Greek seasoning (mixture will be thick). Let stand 5 minutes. Add chopped spinach and beef; mix until thoroughly blended.
Shape mixture into 10 small patties, about 1/2 inch thick. Place on rack in broiler pan. Bake 18 to 22 minutes or until meat thermometer inserted in center of patties reads 160°F.
Meanwhile, place dinner rolls on baking sheet, cut sides up. Spoon about 2 teaspoons feta cheese on top half of each dinner roll. Bake 3 to 5 minutes or until cheese is softened and rolls are warm.
Place a burger on bottom half of each dinner roll. Top each with 2 spinach leaves, 2 tomato slices and top half of bun.
