cup peach preserves

cup lime juice

tablespoons vegetable oil

teaspoon ground ginger

cups coleslaw mix (from 16-oz bag)

cups torn mixed romaine and leaf lettuce (from 10-oz bag)

cup seedless red grapes

medium nectarines or peaches, thinly sliced

to 2 jalapeño chiles, finely chopped, if desired

tablespoons chopped fresh cilantro, if desired

Preparation

In small bowl, mix all dressing ingredients.

In large bowl, mix all salad ingredients. Just before serving, add dressing; toss gently to mix.
