Ingredients

can (28 oz) Muir Glen™ organic whole peeled tomatoes with basil, drained

cloves garlic, finely chopped

tablespoon chopped fresh or 1 teaspoon dried basil leaves

tablespoon chopped fresh parsley or 1 teaspoon parsley flakes

tablespoon grated Parmesan cheese

teaspoon olive or vegetable oil

teaspoon salt

1/2

teaspoon pepper

medium tomatoes, diced (4 1/2 cups)

cup kalamata or ripe olives, pitted, cut in half

tablespoon capers, if desired

Preparation

In food processor or blender, place all ingredients except fresh tomatoes, olives and capers. Cover; process until smooth.

Remove tomato mixture from food processor. Stir in fresh tomatoes, olives and capers. Use sauce immediately, or cover and refrigerate up to 2 days.
