cup uncooked bulgur

medium tomato, chopped (3/4 cup)

cup chopped seeded cucumber

cup cubed Swiss cheese (2 ounces)

cup diced fully cooked smoked ham

cup chopped fresh parsley

tablespoons thinly sliced green onions

tablespoon chopped fresh or 1 teaspoon crushed dried mint leaves

tablespoons olive or vegetable oil

tablespoons lemon juice

teaspoon salt

teaspoon pepper

Lettuce leaves, if desired

Preparation

Cover bulgur with cold water in bowl. Let stand 30 minutes; drain. Press out as much water as possible.

Place bulgur, tomato, cucumber, cheese, ham, parsley and onions in glass or plastic bowl. Mix remaining ingredients except lettuce leaves; pour over bulgur mixture and toss.

Cover and refrigerate at least 4 hours or overnight. Serve bulgur mixture on lettuce leaves.
