pound extra-lean ground beef

small stalk celery, chopped (1/4 cup)

small onion, chopped (1/4 cup)

teaspoon Cajun seasonings blend

cup uncooked instant rice

1/4

cup chopped green bell pepper

1/2

cup water

medium fresh or 1/2 cup frozen (thawed) okra, sliced

medium tomato, chopped (1/2 cup)

can (11 1/2 ounces) lightly tangy eight-vegetable juice

Preparation

Heat 10-inch nonstick skillet over medium-high heat. Cook ground beef, celery, onion and Cajun seasoning blend, stirring frequently, 4 minutes or until beef is brown and vegetables are tender.

Stir in remaining ingredients. Reduce heat to medium-low. Cover and cook 5 minutes or until rice is tender.
