Ingredients

cup uncooked bulgur

large orange, peeled and chopped (3/4 cup)

medium onion, chopped (1/2 cup)

small tomato, chopped (1/2 cup)

cup chopped fresh parsley

tablespoons lemon juice

teaspoons grated orange peel

teaspoons olive or vegetable oil

teaspoon salt

teaspoon pepper

teaspoon crushed red pepper flakes

Preparation

Cook bulgur as directed on package–except omit salt. In glass or plastic bowl, toss bulgur and all remaining ingredients.

Cover and refrigerate about 2 hours or until chilled.
