cup wheat bran

tablespoons honey

teaspoons vegetable oil

cup boiling water

cup whole wheat or whole wheat blend flour

tablespoons quick oats

teaspoon baking powder

teaspoon salt

teaspoon ground cinnamon

tablespoons fat-free cholesterol-free egg product or 1 egg white

cup fresh or frozen (thawed and well drained) blueberries

Preparation

Heat oven to 400°. Spray 6 medium muffin cups, 2 1/2 x 1 1/4 inches, with cooking spray.

Stir bran, honey, oil and water in medium bowl until blended. Let stand 2 minutes. Stir in flour, oats, baking powder, salt, cinnamon and egg product until just moistened. Fold in blueberries. Fill muffins cups 2/3 full.

Bake 15 to 20 minutes or until golden brown.
